Not a huge difference, but please bear it in mind when you look at the photos.
It is possible to angle the view of the Go 2 such that you won't see the selfie stick in use, or crop it out of the final video, but it certainly won't magically disappear.
Now with insta360 Go 2 I can also do the same, but if I want to record in video mode pro, I have to use the box first to change the mode, since it is always in normal video mode.

Personally, I think the jump from 1080p to 1440p makes a huge difference to the quality of the footage, and is worth the upgrade for that alone.

I like to reframe which works better with 5K and never or rarely want 4K.
Pro users will find plugins for both major desktop video editing suites, as well as an Insta360 desktop app for Mac or Windows, which can output the best quality of video.
